ON JULY 12, 2019, MARY LILI OPENED ITS DOORS ON THE CORNER OF RUE DE LA CHAINE, IN THE HEART OF LA ROCHELLE'S HISTORIC AND LIVELY NIGHTLIFE DISTRICT. SET IN AN URBAN AND NEO-INDUSTRIAL SETTING, THIS COCKTAIL BAR IS THE FIRST OF ITS KIND IN THE CITY. IT WAS CREATED IN THE PUREST TRADITION OF NEW YORK BARS WHILE RETAINING THE SPIRIT OF THE MARITIME CITY. MARY LILI IS A PLACE FOR LIFE, SHARING, MEETING, AND JOY, OFFERING A FRIENDLY AND FESTIVE ATMOSPHERE TO ALL THOSE WHO ENJOY THE PLEASURES OF TASTE.

6TH GENERATION OF THE LOUIS ROYER COGNAC HOUSE, NICOLAS HAS BEEN IN THE SPIRITS WORLD SINCE HIS CHILDHOOD, AND IN THE MIXOLOGY WORLD FOR A TEN YEARS.
FIRST FOCUSED ON THE BUSINESSES OF TOURISM, COMMUNICATION AND EVENTS WITHIN THE EXCELIA GROUP , HE BECAME BRAND AMBASSADOR FOR THE FAMILY TRADING HOUSE IN THE UNITED STATES IN 2014.
SINCE HIS RETURN TO FRANCE IN 2018, HE HAS STRIVED TO BRING TOGETHER WHAT IS SCATTERED AWAY... EVENTS, TOURISM AND SPIRITS ARE AT THE HEART OF THE “MARY LILI” PROJECT.

AFTER AN MBA IN TOURISM MANAGEMENT WITHIN THE EXCELIA GROUP, IT WAS DURING A TRIP TO THE USA IN 2015 THAT NICOLAS DISCOVERED THE WORLD OF COCKTAILS AND THEIR DIVERSITY.
BACK IN FRANCE, HE DECIDED TO LAUNCH THIS NEW INDUSTRY BY TAKING A “CQP BARMAN - NIGHT WORLD” TRAINING COURSE ON A WORK-STUDY BASIS AT THE RENOWNED COCKTAIL BAR LE SYNDICAT , A HEADQUARTERS OF THE PARISIAN COCKTAIL SCENE. WITH HIS SIDEBOY NICOLAS R., THEY FOUNDED MARY LILI TOGETHER ON JULY 12, 2019.

GABRIEL HAS A PASSION FOR CREATING AND DISCOVERING NEW FLAVORS.
AFTER OBTAINING A PROFESSIONAL COOKING BAC, FOLLOWED BY A PROFESSIONAL SERVICE BAC AT THE QUERCY-PERIGORD HOTEL SCHOOL, HE CONTINUED HIS STUDIES WITH A PROFESSIONAL BARTENDER CERTIFICATE AT THE LA ROCHELLE HOTEL SCHOOL , WHICH HE PASSED THANKS TO HIS WORK-STUDY PROGRAM AT MARY LILI STARTING IN SEPTEMBER 2022. NOW ON A PERMANENT CONTRACT, GABRIEL IS ONE OF THE KEY ELEMENTS IN THE DESIGN OF YOUR COCKTAILS.

NICOLAS'S PASSION FOR THIS FASCINATING WORLD WAS BORN AT THE RESTAURANT L'ÉCUME, LOCATED ON THE ISLAND OF OLERON.
SELF-TAUGHT, HE DEEPENED HIS INTEREST IN COCKTAILS THANKS TO THE INNOVATIVE TECHNIQUES PRESENTED IN DAVE ARNOLD'S BOOK "LIQUID INTELLIGENCE". AFTER AN EXPERIENCE UNDER THE DIRECTION OF CAMILLE PELISSON AT L' OCTOPUS (FORMERLY BARMAID AT MARY LILI, NOW AT TATA COCKTAIL BAR , COPENHAGEN), HE JOINED OUR TEAM IN JANUARY 2024.
